We selected this decaf for the quality of the decaffeination. Several processes exist, often using solvents. The Descamex company uses water in a process it has named Mountain water. It is expensive but it has several advantages:

  • The result in the cup is very convincing.

  • The health effects have not been demonstrated (to our knowledge) but when in doubt, we prefer decaffeination to water :)

  • In addition, decaffeination takes place in the producing country (to avoid the product having to travel around the world).

The region: Veracruz

In the southwest of Mexico, the Chiapas region has a contrasting relief, with coasts, valleys, mountains and tropical forests. It is one of the most important regions for Mexican coffee growing. The climatic conditions of Chiapas allow for a rich and diverse agriculture. Coffee, cocoa, but also bananas, corn, mango, honey and cane sugar are grown there. There are many indigenous communities: Mayans, Tseltal, Tzotzil, Ch'ol, Tojol-ab... Coffee plantations are most often family-run and there are more and more solidarity cooperatives. In short, it is a region extremely rich in culinary, cultural and geographical diversity!
