This micro-lot comes from Agua Sarca farm, managed by Isacio J. Albir Vilchez in Nueva Segovia, Nicaragua. A dedicated producer, he has been carrying on his family’s expertise for over 30 years, constantly refining the quality of his coffees. The farm spans 76 hectares, exclusively dedicated to coffee cultivation, with a strong focus on rare varieties and sustainable practices.

From the Maracaturra variety—a natural hybrid between Maragogype and Caturra—this coffee stands out with its large beans and complex aromatic profile. Its washed fermented process involves double fermentation (anaerobic followed by aerobic), enhancing its texture and amplifying its flavors.

Located in northern Nicaragua, bordering Honduras, Nueva Segovia is renowned for its high-quality coffees. Its mountainous terrain, ranging from 1,000 to 1,500 meters above sea level, provides an optimal climate for coffee cultivation, with moderate temperatures and well-balanced humidity throughout the year.

Nueva Segovia’s coffees are often grown under shade, promoting slow cherry maturation and subtle aromatic development. The region has gained prominence in the specialty coffee scene, thanks to family-run farms committed to sustainable and innovative practices. Its cup profiles are known for their balance and finesse, with distinct floral and fruity notes.

In the cup, the attack is smooth and sweet, revealing aromas of strawberry, apricot, honey, and rose. Its delicate acidity and silky body bring elegance, making it an excellent choice for both filter and espresso.
