Olman Valladarez’s work
A second-generation producer, Olman Valladarez has gradually steered the family operation towards specialty coffee. His coffees have been recognised several times at the Cup of Excellence.
Building his own washing and drying station has allowed him to control the coffee’s processing through to export.
Complex agroforestry
The coffee trees grow under substantial shade, with several tree species and different vegetation layers. This structure supports biodiversity and a gradual ripening of the cherries.
Olman’s project also aims to reduce the use of chemical inputs and preserve forests and water resources.
Origin and producers
Dipilto · Nueva Segovia · Nicaragua
Olman Valladarez produces this coffee in the mountains of Dipilto, in northern Nicaragua, close to the Honduran border. The plots lie between 1,200 and 1,500 metres above sea level on sandy soils.
Born into a coffee-growing family, Olman took over the operation during a difficult economic period. From the 2000s onwards, he focused his work on coffee quality, process control and the development of the family operation.
From fruit to coffee

The cherries are hand-picked from November to March. After the washed process, the coffee dries on drying beds.
Brewing
Best suited to filter and immersion brewing: subtle notes, silky body and a toffee aroma. As espresso, the cup is brighter and more acidic.
